Raw Desserts – How to make Raw Peanut Butter Slice

How was your week? Have anything planned for the weekend?

Over the last week, I’ve been craving for some sweets. Seriously. But I’ve been so busy that I haven’t really had the time to workout. It’s not about being a certain size, but more of being healthy and balancing what I eat with physical activities. And some of you might agree that sitting in the office the whole day isn’t exactly a physical workout. I know! So instead of going for the regular sweet stuff, I decided to satisfy my craving with raw desserts. Have you heard of that before?

Raw desserts are made of all-natural ingredients and they deliver amazing flavours. Another great thing about these desserts is that they are packed with fiber and nutrients, two things rarely found in typical desserts. And don’t forget that guilt-free feeling afterwards too!

Today I made Raw Peanut Butter Slice and it was so delicious.

2 cups almonds
2 heaped tbsp cacao powder
4 tbsp organic peanut butter
4 tbsp rice malt syrup
2 tbsp coconut oil
2 tbsp cacao nibs
1 tbsp chia seeds

Here’s what you do:

Process almonds and cacao powder until finely chopped and crumbly.
Add remaining ingredients and mix well.
Taste it, if you think you need it sweeter you can add more rice malt syrup.
When the mixture holds its shape when pinched its the right consistency.
Press the mixture into the tray and put in the freezer while you prepare your filling.

2 tbsp coconut oil
 5-6 Tbsp organic peanut butter
4 tbsp rice malt syrup
Here’s what you do
Melt the coconut oil over low heat in a bowl over simmering water.
Once melted add the peanut butter and mix with a whisk.
Keep the heat low and add your rice syrup.
If it’s not sweet enough add more rice syrup.
Remove the tray from freezer and pour the mixture into the tray on top of your base.
Return to freezer while you make your chocolate topping.


80g cacao butter, shaved
2 heaped tbsp cacao powder
4 tbsp rice syrup
1 tsp organic vanilla extract

Here’s what you do:

Place your shaved cacao butter in a bowl over simmering water.
Whisk the cacao butter until completely melted.
Add the remaining ingredients and whisk until combined.
Adjust the sweetness if necessary.
Remove the tray from the freezer and pour the chocolate mixture on top of the peanut butter filling. Place in the freezer until frozen. Make sure you keep the tray level.

Once your slice is frozen through you are ready to slice into squares.
Store in an airtight container in your fridge for up to 1 week.
Look at that, doesn’t it look so delicious? It’s healthy too!
